OH SO Delish!

Is anyone out there?!! Where are your posts about losing the LARD! I keep checking to see some good pictures or exercise vomiting fun, but no, nothing! Oh well, I guess I can post again. We just had some fantastic burgers that were so flippin yummy....and really healthy. I thought I would post the recipe so you could enjoy too. We made these last year, but they weren't the good-for-you version, Geoff was craving them so we altered them to "fit" our diet. They turned out amazing! Try them out and let us know what you think.

We didn't have any buns, so Geoff went to the store and instead of buns found these

They come in three different varieties and worked out to be the perfect size for our burgers. Much better than a regular bun, or even the wheat buns.

Glazed Bacon-and-cheese-filled burgers:
3 TBS dark brown sugar
1 1/2 tsp. paprika
1/2 tsp. garlic powder
1/2 tsp. ground cumin
1/4 tsp. chipotle powder
1/4 tsp. salt
1/4 tsp. fresh ground pepper
1 pound ground turkey
1/2 Cup shredded sharp cheese (use reduced fat if you want)
6 slices turkey bacon (cooked and crumbled)

combine all spices in small bowl and set aside. Form 8 equal patties of turkey. Toss cheese and bacon together and place equal amount on 4 of the patties.
Place remaining patties over cheese mixture and pinch edges to seal. Generously pat each burger with spice mixture. Grill to desired doneness. ENJOY!

Note: turkey Burger is a little softer than beef, so we cooked them on our Foreman grill instead of outside, I think it might be a disaster if you tried the real grill and didn't have something under it.

Anywho, we hope you are all failing, just joking, Please give us some updates on your progress (or lack of) I am glad I am typing this now, because tomorrow I am afraid I won't be able to use my arms!! Keep it up TUBBY!!

  1. I don't know how to post on this bad boy, but I liked the recipe sharing. The other night I made some stuffed peppers that were delicious! I didn't really measure anything but I will try my best to guestimate!

    Stuffed Peppers (serves 4):
    5 Bell Peppers (I like to use 4 red and any other kind for the stuffing)
    1/2 lb ground turkey
    1 C cooked couscous (whole wheat or olive and garlic)
    1 zuchini
    1 Portabello mushroom
    1-2 roma tomatoes
    1/3 white onion (medium)
    Add any other vegetables of your liking!
    1/4 C Mozzarella
    Basil (fresh if you have it)
    Salt and Pepper
    Italian Seasoning

    Brown turkey and set aside. Saute 1 diced pepper, diced zuchini, and diced onions (adding tomatoes and mushrooms at the very end). Season well, especially if you use the whole wheat couscous. Combine browned turkey, cooked couscous, and vegetables. Cut tops off the red pepper and take out seeds. Stuff peppers. You can pack them pretty good. Coat the peppers with a little olive oil. Sprinkle a little mozzarella on the top and bake for 15 minutes @ 350 or until the cheese is browned.
